Make a pie crust with the dough ingredients. Roll out to a 1/4-inch thick on a lightly floured surface. Place the dough in a 9 or 10-inch tart pan. Cover with plastic wrap and refrigerate overnight. Preheat the oven to 475F. Scatter the grated cheese in the base of the pie crust. In a bowl beat together the eggs, cream, nutmeg, salt and pepper. Pour the egg mixture over the cheese. Place the quiche in the oven and bake for 45 minutes. If after 25 minutes the quiche seems like it is browning too quickly, cover it with aluminum foil. When you remove the quiche from the oven, place several pieces of cheese on the top and return the quiche to the oven for several minutes, until the cheese melts. Serve warm.
